A lifestyle-driven hospitality environment translating heritage craft and artisan culture into an elevated physical space — where the warmth of the roast meets the refinement of the room.
The Herst Coffee Roasters remodel is conceived as a residential sanctuary masquerading as a coffee bar — a space where the ritual of specialty coffee is elevated through material richness and architectural intention.
This brief outlines a curated palette of primary and accent materials that honor the artisanal heritage of the roastery while delivering a hospitality environment of genuine sophistication. Every surface, finish, and fixture has been selected to create a cohesive, moody, and deeply considered interior.
Central to the transformation is the introduction of PINKYS steel doors opening directly to the street — anchoring the façade and inviting the neighborhood into the space with drama and permanence.
The goal is not renovation — it is transformation. To create a cultural outpost that feels as though it has always existed here: earned, layered, and completely at home.
Quarried in Tuscany's Carrara region, Cipollino is defined by its dramatic swirling veins of deep green, grey, and white — each slab a unique work of geological art. Large-format installation creates a richly textured, moody interior ground plane that anchors the entire material story.
Interior · Primary FieldPremium Grade Sagano Vibrant Green Matcha Verde Marble in a 1×4 elongated oval mosaic format — honed to a matte, tactile finish. The cool grey-green tones and white veining of each individual tile create a richly patterned field when set in staggered rows, bridging the Cipollino's bold green drama with a quieter, more intricate ground plane in transitional zones.
Accent Floor · Mosaic · HonedDark walnut cabinetry and wall paneling deliver the "moody and intimate" quality that defines the finest hospitality environments — referencing the warm gravitas of historic London gentlemen's clubs. Grain variation is part of the character; consistent finish, natural imperfection.
Wall Primary · MillworkWhere walnut yields to lighter register, fluted plaster adds tactile texture while maintaining a sophisticated, quiet atmosphere. The vertical rhythm of the flutes elongates wall panels and creates a refined interplay of light and shadow — particularly effective under warm directional lighting.
Accent Wall · Relief TextureThe service counter is the spatial centerpiece — the place where the ritual of coffee is performed. Calacatta Viola, with its signature purple-grey veining on a warm white ground, delivers a distinctive and unmistakably curated counter surface. Paired with polished brass logo inlays and custom deep-green millwork below, the counter reads as both workhorse and objet d'art. This material choice signals intent: this is not a typical café.
The seating programme is organized around two distinct social modes: a standing bar along the service wall — topped in Calacatta Viola marble with a brass foot rail, upholstered leather bar stools in deep tobacco — and round café tables in dark walnut with mid-century bouclé chairs for longer dwell. Together, they accommodate the full spectrum of the café experience: the quick espresso at the bar and the extended meeting at the table.
Counter-height bar stools with leather-wrapped seats and walnut or blackened steel frames line the standing bar. The leather will patina with use — accruing the character of a well-worn saddle — creating the lived-in quality that distinguishes Herst from a polished café.
Bar Height · Counter SeatingYellow bouclé side chairs at round walnut café tables introduce mid-century warmth and a moment of unexpected cheer in an otherwise tonal interior. The textural contrast of bouclé against smooth marble and dark wood is intentional and considered — not decorative pastiche.
Table Height · Loose SeatingDeep forest green elongated subway tiles in vertical stacked bond — glossy glazed finish that catches and reflects warm light. Applied to wet wall zones and shower enclosures, these tiles reinforce the brand's deep green signature at the most intimate scale.
Shower · Feature WallA fluted white marble vanity — the same fluted language used on the walls of the main space, here translated into stone. The vertical ribbing catches directional light beautifully, creating rhythm and shadow across what would otherwise be a flat surface. Anchors the bathroom with material weight.
Vanity · Basin SurroundSmall-format silver metallic mosaic tile used as a ceiling inset or niche accent — the reflective surface amplifies light and adds a moment of unexpected shimmer. A subtle luxury detail that elevates the overall finish level.
Ceiling Inset · Niche AccentA muted, dusty sage green on non-wet wall surfaces — quieter and lighter than the deep forest green tile, this paint tone bridges the dark palette of the main space with the brightness needed in a bathroom. Flat or eggshell finish; moisture-resistant formulation.
Paint · Dry Wall ZonesArched gooseneck faucets in a warm rose-bronze finish — the fixture choice that bridges the green tile, white marble, and dark walls with a warm metallic note. The rounded arch form echoes the Air 4 Mini Arch door profile, creating a quiet continuity of curved language from façade to interior to bathroom. Specified throughout: basin tap, towel rail, and accessories.
A warm rose-taupe shelf or tray surface — powder-coated steel or lacquered timber — introduces a dusty warmth that softens the contrast between dark green tile and white marble. Used for vanity trays, floating shelves, and accessory surfaces.
Vanity Tray · Floating ShelfThe primary background surface — a deep forest green in textured lacquer or linen-weave wallcovering — sets the mood of the entire bathroom. This is the same deep green from the main space millwork palette, here used as a full wall treatment to create an enveloping, intimate atmosphere.
Feature Background · Full WallPolished brass appears consistently throughout: door pulls, light fixtures, counter inlays, and shelf hardware. The material bridges warm wood tones and cool stone surfaces, providing cohesion across the palette. Specification includes pendant lighting in the tradition of Achille Castiglioni's "Light Ball" — bold, graphic, mid-century references.
Hardware · Lighting · InlaysDeep forest green is the signature brand color — applied to textured lacquer panels, millwork below the service counter, and select architectural details. It ties Cipollino's natural green veining back into the designed environment, creating chromatic continuity across stone and crafted surfaces.
Millwork · Brand ColorThe street-facing façade is the first and most enduring impression Herst makes on the neighborhood. The Air 4 Double Mini Arch — with its signature arched top panels and slim steel sightlines — transforms the entrance from a functional threshold into an architectural statement. Hand-crafted from 12-gauge cold-rolled galvanized steel with 5/8" Low-E dual-pane tempered glass and a polyurethane foam core, the door floods the interior with natural light while the arched silhouette introduces a classical note against the contemporary steel finish. Opening outward to the street, the double configuration creates a grand, welcoming gesture.
Spherical brass pendant fixtures — referencing Achille Castiglioni's "Light Ball" lamp — provide warm, graphic punctuation above the service counter and key seating zones. Bold, iconic, unmistakably considered.
Warm-white LED strips integrated within walnut millwork and ceiling coves create ambient illumination that highlights the natural grain of dark walnut and draws out the pattern within Cipollino marble. Color temperature: 2200–2700K throughout.
Recessed directional downlights and adjustable track spots create theatrical vignettes — highlighting the marble service counter, framing seating nooks, and washing dark walnut panels with warm directional light. Atmosphere by intention, not accident.
